Strawberry Dragon Fruit Margarita

I made Dragon Fruit Simple Syrup, and it is amazing! If you’re not eating Dragon Fruit, you should go buy one. They are super-delicious, despite looking like an alien egg.
I made a Strawberry Dragon Fruit Margarita with Lemon-infused salt. We finally got the stuff out of the dehydrator, and it rocks!
Recipe:
1.5 oz. Casamigos Silver Tequila
1 oz. Dragon Fruit Simple
1 oz. Strawberry Simple
.5 oz. Lime juice
.75 oz. Cointreau
The Casamigos really took this to a new level, and then it faded every so nicely into the Dragon Fruit and Strawberry. The lemon salt on the side really helped control the amount of citrus, so it wasn’t just the sugar from using two simple syrups, and the lime in the drink was just enough to let you know it was still a margarita. Overall, I am very satisfied with the way it turned out, and I made the simple as follows.
Dragon Fruit Simple Syrup
0.5 cup Sugar
0.5 cup water
Heat until sugar dissolves
Pour into a quart jar
Cut up half a dragon fruit into 8 wedges, leaving the rind on
Place into the simple for roughly 30 minutes and let it cool
Place the cooled simple in the fridge for about 4 hours
Strain off the solids and enjoy!
Leaving the rind on really allows it to become a beautiful pink hue, and doesn’t ruin the flavor at all. It really is a crisp, amazing simple, and I recommend it to anyone. You can also just use it in soda water to make a refreshing Dragon Fruit spritzer, or put Rum in that and feel like you’re on a beach somewhere.
All in all, a wonderful experience, and I will be making this and using it again soon.
